
Executive Chef with Pici - Pirata Group

- Support the Corporate Chef in menu development with a strong focus on traditional and regional Italian recipes
- Lead the creation of monthly themed menus, including dish testing, recipe development, and costing
- Work closely with restaurant head chefs to standardise execution across multiple locations
- Monitor food quality, presentation, and consistency across all locations
- Analyse food cost and kitchen labor cost, ensuring targets are met
- Develop training materials and conduct on-site training sessions for kitchen teams
- Ensure compliance with HACCP and food safety standards
- Collaborate with marketing and operations teams for seasonal promotions and events
- Be a hands-on leader: lead by example and foster a strong kitchen culture
- Minimum 5 years’ experience as a Head Chef or Executive Sous Chef in Italian restaurants
- Proven expertise in authentic Italian cuisine, especially pasta making and traditional dishes
- Fluent in English (spoken and written)
- Experience with managing multiple locations
- Experience with kitchen inventory systems and cost control software
- Experience with menu engineering and recipe creation
- Experience with new openings
- Excellent training, coaching, and leadership abilities
- Highly organised, reliable, and adaptable to fast-paced environments
